  • 1/3 cup fresh cranberries
  • 2 tbsp honey (plus more for drizzling)
  • 2 tbsp unsalted butter
  • 1/4 tsp ground cinnamon (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve the pears lengthwise and scoop out the cores. Trim bottoms if necessary for stability.
  3. Arrange pear halves cut-side up in a baking dish and add a pat of butter to each.
  4. Roast in the preheated oven for about 20 minutes until fork-tender.
  5. While pears are roasting, simmer cranberries with honey in a saucepan until they burst and form a sauce.
  6. Once pears are done, fill each half with goat cheese.
