  • 1 wheel of brie cheese (812 oz)
  • 1 sheet frozen puff pastry, thawed
  • 12 tablespoons honey
  • 12 tablespoons fig preserves
  • 1 tablespoon fresh thyme leaves
  • Black pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Optional: Coarse sugar for sprinkling
  • Optional: Chopped walnuts or pecans

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Roll out the thawed puff pastry on a floured surface and place the brie wheel in the center.
  3. Score the top of the brie with a crosshatch pattern.
  4. Spread fig preserves over the brie, drizzle honey, sprinkle thyme leaves and black pepper.
  5. Fold the puff pastry over the brie, sealing all edges tightly.
  6. Brush with beaten egg and sprinkle coarse sugar if desired.
