  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/8 tsp ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples, grated

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves.
  3. In another bowl, mix vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed; do not overmix.
  5. Fold in grated apples until evenly distributed.
  6. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Allow cooling briefly before adding the brown sugar icing made by melting butter with brown sugar and heavy cream; then whisk in powdered sugar.
