  • 10 g unsalted butter (for filling)
  • 8 g light brown soft sugar (for crumble)
  • 17 g plain flour (for crumble)
  • 1/8 tsp cinnamon (for crumble)
  • 175 g unsalted butter (softened) (for cupcakes)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened) (for buttercream)
  • 350 g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the apple filling by peeling and chopping apples, then cooking them with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes. Let cool.
  2. Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon; rub in butter until it resembles breadcrumbs. Bake until golden.
  3. For the cupcakes, cream softened butter and sugar, add eggs one at a time, then fold in flour and spices. Bake until golden brown.
  4. Once cooled, core the cupcakes and fill with apple mixture. Prepare buttercream by mixing softened butter, icing sugar, cinnamon, and milk until smooth and pipe on top of each cupcake.
  5. Finish by adding remaining apple filling on top and sprinkling with crumble.
