  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 2 tablespoons sugar
  • ¼ teaspoon nutmeg
  • ½ teaspoon allspice
  • ¼ teaspoon cinnamon

Instructions

  1. In a medium saucepan over medium heat, combine apple cider and butter. Bring to a gentle boil, then simmer until reduced by half. Allow to cool slightly.
  2. In a mixing bowl, blend the reduced cider mixture with granulated sugar, brown sugar, and egg until creamy.
  3. In another bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually mix this into the wet ingredients.
  4. Chill the dough for at least 30 minutes in the refrigerator.
  5. Preheat your oven to 350°F (175°C). Roll chilled dough into balls and coat in a mixture of sugar and spices.
  6. Place on lined baking sheets and bake for 10-12 minutes or until just set around the edges.
