  • 2 cups beef stock
  • 2 tablespoons spicy brown mustard

  • 6–8 garlic cloves (smashed)
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • 1 sweet onion (sliced)
  • 2 Granny Smith apples (peeled, cored, and cut into thick slices)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F.
  2. Trim any excess fat from the beef roast and pat dry.
