  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (or dairy-free cream)
  • 1 tsp Cajun seasoning
  • 1/2 tsp thyme
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add sliced sausage and cook until browned (5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté onion, bell pepper, and garlic until softened (3-4 minutes).
  3. Sprinkle flour over vegetables; stir well and cook for another 1-2 minutes to form a roux.
  4. Gradually pour in chicken broth while stirring continuously; simmer for about 5-7 minutes until thickened.
  5. Stir in cream, Cajun seasoning, thyme, salt, and pepper. Return sausage to skillet; mix well.
  6. Let simmer for an additional 5 minutes before serving hot over rice or mashed potatoes.
