  • 1 lb large raw shrimp (peeled and deveined)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • Sriracha (to taste)
  • 10 flour tortillas
  • Coleslaw mix with cilantro and green onion

Instructions

  1. Pat shrimp dry and set up a dredging station with three shallow bowls (tapioca flour mixture, egg wash, and breadcrumbs).
  2. Dredge each shrimp in tapioca flour, then dip into egg wash, and coat in breadcrumbs.
  3. Preheat air fryer to 390°F (200°C). Place breaded shrimp in the basket and spray lightly with cooking spray.
  4. Air fry for 7 minutes, flipping halfway through.
  5. While shrimp cooks, combine mayonnaise, Thai chili sauce, and sriracha for the bang bang sauce. Mix coleslaw ingredients together.
  6. Toss cooked shrimp in the bang bang sauce and assemble tacos with slaw in tortillas.
